This fantastic competition involved a guided tour through Billingsgate Market,
fish demonstration, a ready steady cook challenge using the prepared fish, Major Bases and a basket of fresh ingredients, followed by six chefs from across the group creating their own dishes for the grand final. Judged by Danny Silcock, Brakes Development Chef, Jamie Clews from Robot Coup and our very own Development Chef, Fergus Martin. Our congratulations to this year’s winner, Gary Edson of Leawood Manor.
We know care catering is a demanding sector. Providing food and nutrition for the elderly and vulnerable can be a challenge. It’s not just time and cost constraints which are challenging, but the requirement to cater for individual allergen and dietary requirements too, which is where our user-friendly stocks, gravies and sauces really come into their own.
We understand that serving nutritionally balanced meals is crucial in a care setting. Having products that are consistent in flavour and quality, which are also highly versatile is a must in today’s modern kitchen.
Using our pro-active approach to NPD,
we launched our Instant Gluten Free Gravy Granules with Vitamin D. Vitamin D is essential to an individual’s physical, emotional and social health. It contributes to healthy bones, facilitates hormone regulation, manages blood sugar levels, enhances the immune system, improves heart health and supports concentration and memory. Vitamin D is vital.
Vitamin D is most often obtained from the sun, so care home residents can be deficient as they traditionally spend less time outside than the wider population. Using an allergen-free recipe, approved for vegan diets, our Instant Gluten Free Gravy Granules with Vitamin D is available in two varieties – meat and poultry. It delivers as much as 40% of the recommended daily intake of vitamin D per portion. Made in
the UK, it yields up to 25 litres per tub, and meets new 2024 salt targets.
We truly believe food is medicine, which
is why we give such careful consideration to the quality of the ingredients in our products. Our pastes, for example, contain a higher first ingredient than most other brands – Major Lamb Stock Paste contains 42% lamb. There’s no other stock paste as close to the real thing. We know many chefs can create wonderful stocks and gravies from scratch, however, we recognise time and staffing
– especially in this sector – can make this difficult. Producing a meat stock from scratch can take hours to achieve the depth of flavour and rich colour desired. The stockpot needs to be watched, to ensure skimming and the correct liquid level maintained; and obviously uses energy in the constant time it’s on the stove – particularly costly when energy prices have risen dramatically.
